Many Americans know the sage as a dried herb that is added to Thanksgiving stuffing to enhance its flavor.
It is an herb of ancient reputation, valued as a culinary and medicinal plant. Sage, which is called salvere in Latin to “save”, has a long history as a medicinal plant and as such was featured in Theophrastus. This was much in evidence in Roman times, again for medicinal purposes, but was well established mainly as a culinary herb in medieval England.
