How to Bake Space Cookies: A Simple and Quick Recipe

What are Space Cookies?
Space Cookies are not food for astronauts – they are pastries with hemp additives. They are prepared similarly to classic cakes, bundts, or brownies, with one crucial difference: the main ingredient is hemp-infused butter (cannabutter).
These delicacies are offered by almost all Amsterdam coffee shops and their popularity continues to grow. The good news is that you can bake them at home – saving money and ensuring quality ingredients.

Why is Decarboxylation Important?
Before baking, you must properly prepare the hemp. Decarboxylation is a key process where cannabinoid acids are converted to active cannabinoids by heat. For example, CBDA is converted to CBD.
How to do it: Spread ground hemp buds on a baking sheet with parchment paper and place in an oven heated to 105–120 °C for 30–45 minutes. Without this step, the pastry would not have the desired effect!
Proven Space Cookies Recipe
Ingredients
- 8 g hemp buds
- 225 g butter
- 175 ml milk
- 200 g sugar
- 225 g all-purpose flour
- 2 eggs
- 2 teaspoons baking powder
- pinch of salt
Optional Enhancements: cocoa, vanilla extract, dried fruit, chocolate chips, nuts, lemon glaze or buttercream

Preparation Steps
1. Hemp Decarboxylation
Preheat oven to 105–115 °C. Spread ground buds on a baking sheet with parchment paper and leave in the oven for 30–40 minutes. This activates all active ingredients.
2. Dough Preparation
Increase oven temperature to 190 °C. Microwave butter for 20 seconds, add ground buds and mix thoroughly.
3. Mixing Ingredients
In a large bowl, mix flour, sugar, baking powder, and a pinch of salt. Add milk, hemp butter and eggs. Mix until smooth batter forms.
4. Baking
Grease pan or line with parchment paper. Pour batter and spread evenly. Bake for 20–25 minutes – cake is ready when a toothpick comes out clean.
5. Finishing
Let cake cool for 15 minutes and decorate as you wish – with powdered sugar, glaze, or anything you fancy!
